Vegan Dill Yogurt Veggie Dip


Someone once suggested that the key to a satisfying vegan diet is a regular supply of really delicious sauces. The freshness of the cucumbers and dill create a flavorful dipping sauce....

Snacking on crisp veggies can be so refreshing on a hot summer day. They can be even more delicious with a tasty dipping sauce to go along with them!

Cut up some colorful fresh veggies in a variety of shapes, and lay them out on a plate with this dip in the middle. You are sure to get plenty of "ooohhhs" and "aaaaaahhhhsss". You may even get them to eat their veggies!

Vegan Dill Yogurt Veggie Dipping Sauce

Prep time: 5 minutes

Makes: 10 servings

INGREDIENTS

  • 2 Persian cucumbers

  • 1 garlic clove, minced

  • 1/4c fresh chopped dill

  • 2T lemon juice

  • 1c unsweetened coconut yogurt

  • Salt & pepper to taste

DIRECTIONS:

1.) Grate the cucumbers (including the skin). Place in a fie strainer or cheesecloth to remove the excess liquid.

2.) Combine ingredients together, stirring with a spoon.
