Easy, Craveable Veggie Tots
Free of gluten, eggs, dairy, meat, nuts, and added sugars. Sneaking some veggies and some extra nutrients in to a favorite side dish....
There are very few people in the world that don't love tater tots. The classic version may pique the taste buds, but they sure don't offer much in the way of nutrients.
This amped-up recipe includes some extra protein, a bit of b-vitamins, and some extra broccoli. So, parents, you have a new way to sneak in some extra veggies.... and maybe even get a thank you along the way.

Easy, Crave-able Veggie Tots
Prep time: 30 minutes
Bake time: 30 minutes
Serves: 6
INGREDIENTS
1c shredded potatoes
1c broccoli rice
1/4c garbanzo flour
1/4c quinoa flour
1/3c nutritional yeast
1 1/2T olive oil
1/4t salt
1/2t pepper
1/2t chili pepper

DIRECTIONS:
1.) Preheat oven to 400F.:
2.) Briefly cook the potatoes and broccoli:
- Barely cover with water. Bring to a boil. Turn off heat.
- Allow to cool completely.
- Place in a cheesecloth and squeeze to remove extra water.
3.) Combine all ingredients together in a large mixing bowl.
4.) Line a cookie sheet with parchment paper. Form potato/broccoli mixture into small "tots". Lightly (and carefully coat with olive oil. Place tots on a cookie sheet.
5.) Bake on 400F for 15-20 minutes or until crispy.
